Fall Inspired Salad Recipes

Salads don't have to only be crunchy and refreshing for the summer time.  Although they are typically not thought as a comfort food, with the right ingredients they can be a great healthy meal option for the fall.

Harvest Quinoa Salad with Cider Vinaigrette

Ingredients: 

  • 1 cup tri-color quinoa
  • 1 cup cubed and roasted butternut squash
  • 1 apple , diced
  • 1 green onion
  • 2 cups baby kale or spinach, chopped
  • 1/3 cup dried cranberries
  • 2 tablespoons toasted slivered almonds
  • 2 tablespoons pumpkin seeds (saw or roasted)
  • Salt and pepper to taste

Cider Vinaigrette:

  • 1 cup apple cider
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons minced shallot
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Autumn Kale Broccoli Salad

Ingredients:

  • 2 medium roasted sweet potatoes, peeled and diced
  • 2 cups chopped broccoli florets
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 4 cups chopped kale leaves
  • 2 cups cooked brown rice
  • 2/3 cup dried cranberries or cherries
  • 2/3 cup chopped toasted pecans (optional)

Dressing Ingrediens:

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar (or apple cider vinegar)
  • pinch of salt and pepper and garlic powder

Apple Pecan Spinach Salad with Maple Cider Vinaigrette

Ingredients:  

  • 10 oz baby spinach
  • 3 small gala apples or 2 medium , cored and thinly sliced
  • 1 cup pecans , (toasted optional)
  • 1/2 cup dried cranberries
  • 1/2 small red onion sliced 

Maple-Cider Vinaigrette Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons pure maple syrup
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Apple Walnut Salad with Blackberry Balsamic Vinaigrette 

 Ingredients:

  • 10 oz spinach or spinach/spring mix
  • 6 oz blackberries
  • 1 honey crisp or Fuji apple, chopped
  • 1 Granny Smith apple, chopped
  • 1 small cucumber, sliced and quarters
  • 1 red bell pepper, chopped
  • 2 green onions, chopped 

Honey Roasted Almonds (optional): 

  • 1 cup raw walnut halves
  • 2 tablespoons honey
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Blackberry Balsamic Vinaigrette:

  • 3 tablespoons seedless blackberry jam
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1-3 teaspoons honey (optional)
  • 2 tablespoons orange juice
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
